Holland Hound
1 ½ oz (45ml) Wild Ginseng & Manuka Honey Gin
½ oz (20ml) Drambuie
Premium Grapefruit Tonic
Add the Gin, Drambuie and 1/2 dozen ice cubes to a cocktail shaker. Short shake for 5-10 secs or until cold. Strain into an old fashioned glass filled with ice and top with the grapefruit tonic. Garnish with a fresh sprig of rosemary and a maraschino cherry (optional).

Pink Grapefruit G&T
2 oz (60ml) Pink Grapefruit & Kawakawa Gin
150ml-180ml Premium Tonic Water
Lime Wheel or Juniper Berries (Optional)
Pour the gin into a Snifter or Brandy glass filled with ice. Pour your desired tonic water into the glass over the back of a spoon (to increase the bubbles). Stir once and add the garnish of your choice.
* Juniper berries as a garnish option create a more botanical experience. Experiment with various premium tonic water or soda water to help to bring out the aromatic botanicals in this gin.

Germain Summer
2 oz (60ml) Sauvignon Blanc & Green Tea Gin
¾ oz (25ml) Lillet Blanc Vermouth
¼ oz (7.5ml) St-Germain Liqueur
1 Teaspoon Simple Syrup
2 Dashes Orange Bitters
Stir all ingredients vigorously in a chilled mixing glass with ice. Add ice to a coupe or cocktail glass and strain the ingredients into the glass over the ice.

Evenfall

1 ½ oz (30ml) Cocchi Americano
3-4 Dashes of Orange Bitters
Combine all ingredients in a chilled mixing glass. Add a handful of ice. Stir well (longer than necessary). Double strain into a chilled Coupe glass and garnish with a fresh folded orange peel on a cocktail pick.

Backchat

¾ oz (25ml) Green Chartreuse
¾ oz (25ml) Freshly Squeezed Lime Juice
Add all ingredients into a cocktail shaker with ice. Shake and double strain into a chilled Timeless Wine Cobbler or Nick & Nora style glass. Garnish with a maraschino cherry or dehydrated lime wheel.

Paddington
2 oz (60ml) Wild Ginseng & Manuka Honey Gin
¾ oz (25ml) Freshly Squeezed Lime Juice
½ oz (15ml) Freshly Squeezed Lemon Juice
1 Teaspoon Simple Syrup
1 Tablespoon Marmalade Jam
Combine gin, marmalade jam and simple syrup into a cocktail shaker and stir well to break up the jam. Add the freshly squeezed lemon and lime juice to the shaker and shake vigorously with ice. Double strain into a coupe glass and garnish with an orange twist.
