2 oz (60ml) Wild Ginseng & Manuka Honey Gin
1 oz (30ml) Midori
2 ½ oz (75ml) Fresh Orange Juice
2 ½ oz (75ml) Pineapple Juice
¼ oz (7.5ml) Ginger Syrup
In a small pot on medium heat, combine 1/2 cup of sugar and 1/2 cup of water. Stir constantly until sugar is dissolved. Add 100g of freshly peeled and sliced/chopped ginger and continue to heat, bring syrup to a light boil. Reduce the heat and simmer for 15 minutes. Remove from the heat and allow to cool. Strain out ginger and bottle. Should last for 3-4 weeks.
Add all ingredients into a cocktail shaker with ice and shake vigorously. Strain into a Hi-Ball glass half-filled with ice. Stir gently and garnish with an orange wheel.
