INGREDIENTS

2 oz (60ml) Wild Ginseng & Manuka Honey Gin
2 oz (60ml) Ginger Syrup
1 oz (30ml) Freshly squeezed lime juice
120ml-150ml Premium Soda Water

GINGER SYRUP

In a small pot on medium heat, combine 1/2 cup of sugar and 1/2 cup of water. Stir constantly until sugar is dissolved. Add 100g of freshly peeled and sliced/chopped ginger and continue to heat, bring syrup to a light boil. Reduce the heat and simmer for 15 minutes. Remove from the heat and allow to cool. Strain out ginger and bottle. Should last for 3-4 weeks.

GARNISH

Long thin strip of freshly peeled ginger
Dehydrated Lime Wheel (Optional) 

METHOD

Add the gin, lime juice and ginger syrup to a cocktail shaker with ice. Short shake for 5-10 secs then double strain into a large Collins glass 1/2 filled with ice. Top with premium soda water and stir well. Garnish with a long strip of freshly peeled ginger.
